DESCRIPTION
Orzo (also known as Risoni) is a small, dried pasta reminiscent of rice grains.
According to Italians, grains look like barley. For this reason, the product is called Orzo, which means barley in Italian.
It is a well-known pasta variety in most Mediterranean countries. In Israel it is "ptim", in Greece they call it "kritharáki", and in Turkey "arpa şehriye". The product is also well known in Arabia.
In Sicily, at the place of origin of Orzo, people use this pasta primarily as an additive to soups.
But there are many other ways to prepare it, for example with tomato sauce or pesto, also as a pilaf with grilled vegetables.
It is perfect for a quick risotto, called orzotto.
