Celery (Apium L.) is a plant from the celery family consisting of about 19 species. Most of them grow in South America, only celery (Apium graveolens L.) is widespread - it is found in the wild in Europe, it is also widely cultivated, also in Poland.
Celery, due to its sharp aftertaste, is used as a spice, and is also a great addition to meat and vegetable dishes. It is one of the least caloric vegetables, contains twice as much vitamin C as citrus, and is also an excellent source of riboflavin, calcium, vitamin B6, magnesium, phosphorus, potassium, vitamins A and K, and dietary fiber.
The healthiest celery is eaten raw, but only thermal treatment brings out its unique taste. To preserve as much nutritional value as possible, it is best not to simmer it. Instead, vegetables are better prepared by steaming.
