CHIA seeds (Salvia hispanica L) also known as Spanish Salvia is a plant grown by the Aztecs in pre-Columbian times. Currently, seeds are widely used for the preparation of nutritious drinks and food. Jesuit chroniclers describe chia as the third most important crop for the Aztecs, after beans and corn. It is grown in the regions of Mexico and Guatemala. In the fruit that the sage produces, the seeds contain seeds. They have three types of colors, they are available in gray, white and black.
Sage seeds are called chia seeds. Sage was one of the basic components of the Aztec diet. Now it is very popular with travelers because it is a light, but very nutritious product. Increasingly, it also becomes an ingredient in healthy desserts, porridge, fruit, cakes and as an addition to bread.
Chia seeds contain up to 35% fat in their composition, mainly polyunsaturated fats. The fatty acids we find in it are alpha-linolenic, palmitic, linoleic and oleic acid. Thanks to them, they positively affect memory and concentration. Another 25% in the composition are proteins. They are not gluten proteins, therefore those seeds can be consumed by people who had to exclude gluten from the diet. They contain such amino acids as arginine, glutamic and aspartic acid. For this reason, they can have a positive effect on improving immunity. In addition, they contain dietary fiber in high content, it is about 26 grams per 100 grams of product that speeds up metabolism. They also contain tocopherols, i.e. vitamin E, which has an antioxidant effect, i.e. it fights free radicals in our body. Thanks to this, it increases our immunity. The minerals contain potassium, phosphorus, calcium, zinc, iron, copper and manganese. Thanks to all these minerals, chia is a great addition to our diet, which will affect calcium supplementation in the bones, improve our sleep quality, concentration and positively affect the work of our muscles.
Sage seeds can be eaten raw or after being flooded with water, cow's or vegetable milk. After pouring them with liquid they begin to swell and after leaving them for a few hours they create a characteristic pudding. Such a meal gives a quick feeling of satiety that stays for a long time. However, it is worth controlling the amount consumed during the day mainly due to the high content of fiber, if its supply is too high, it will result in poorer absorption of minerals, and may even lead to excessive defecation.

CURIOSITIES
Chia in Nahuatl means "oily".
In 100 grams, it contains more calcium (as much as 631mg) than milk and more omega-3 than Atlantic salmon. In addition, they are an ideal alternative to vegetarians and vegans to supplement protein in the diet.
Preparation of pudding: add about 8 tablespoons of water for one tablespoon of chia. For the first 30 minutes, mix the seeds with water (or other liquid) several times, because they will fall apart. Then set them aside for a minimum of an hour, after which the seeds will evenly spread out in the liquid and create a characteristic pudding for them.

DIRECTIONS FOR USE
Used as an addition to salads, porridge, muesli, cooked groats, potatoes, as a vegetable topping. Ground chia seeds can be combined with flour for baking cakes, pancakes, puddings, soups, soup thickening, baking bread. According to the regulation of the European Parliament in January 2013. the use of Spanish sage seeds as a food ingredient has been extended. Daily seed consumption should not exceed 15g. Sage seeds can be used in bakery products up to a maximum of 10%.
