Chicory inulin is a polysaccharide consisting of glucose and fructose molecules. It is a white powder, soluble in water. It has gelling, thickening and stabilizing properties. In food production, it is used as a fat replacement, reducing the calorific value of products.
Inulin is not digested in the human digestive tract, therefore it plays the role of dietary fiber. In the large intestine it plays the role of a prebiotic, i.e. a food ingredient that has a positive effect on the development of normal intestinal bacterial flora. In addition, it also improves intestinal motility and may contribute to reducing the tendency to constipation.
