DESCRIPTION
Cocoa butter content: 10 - 12%.
Cocoa is prepared in a Dutch style (alkalized), which makes it less acidic and bitter, it also has a more pronounced color and dissolves better in water. Since it is milder, it goes better with other flavors in the dishes. Low fat content makes cocoa less caloric. Due to the alkalization, cocoa has a neutral pH (7-8), so it should be used in recipes that use baking powder (not baking soda).
