Coconut sugar is made from the juice of the coconut palm. After harvesting, the juice from the inflorescences is boiled until a light brown syrup is formed, which, after solidifying, is heated until it becomes a loose consistency.
Coconut sugar looks and tastes like cane sugar. It has a caramel and coconut flavor. It can be used for baking, desserts and sweetening warm drinks. The calorific value of coconut sugar is similar to that of white sugar, and its glycemic index is slightly lower. The GI of white sugar is 68 and the GI of coconut sugar is 35 according to the Food Institute of the Philippines, and 54 according to the University of Sydney.
