DESCRIPTION
Kukicha is green tea, the composition of which consists entirely of twigs and leaf stems - those parts of tea shrubs that are not found in other teas. Hence its name: "kuki" in Japanese means a stalk or stick. Kukicha is made when producing other green teas when the leaf blades are separated from the other elements. Its taste is definitely different: more delicate, sweeter and slightly nutty. Due to the low content of caffeine, kukicha is great for drinking for children, pregnant women and late in the day. For this reason, it is also, along with hojicha, often the recommended tea in the macrobiotic diet. Kukicha also has a high content of relaxing theanine. Theeanine in the leaves in the process of photosynthesis turns into tannins, which give a "bitter" taste in tea. Because photosynthesis does not occur in the stems, they have a natural high content of theanine. Moya Kukicha is the highest quality kukicha that is produced in the matcha production process when the leaves and stems are separated from the aracha (tea leaf blades - matcha intermediate). Unlike ordinary kukichy, it is very lightly roasted (much shorter than hojicha). Thanks to this, it acquires a stronger aroma and a darker yellow-brown color.
