Millet is considered the oldest groats. It is obtained from millet seeds, already grown in the Neolithic age, by shelling the grains of this grain.
Millet has little starch, but a lot of easily digestible protein. It is distinguished by the highest content of B vitamins: B1 (thiamine), B2 (riboflavin), and B6 (pyridoxine), as well as iron and copper. It is easy to digest and does not cause allergies because it does not contain gluten.
Millet contains silica, which has a positive effect on hair, skin and nails. Silicon also plays an important role in bone mineralization and metabolism. Millet also provides large amounts of vitamin E and lecithin, which has a positive effect on memory and concentration.

HOW TO USE
Millet should be rinsed in cold water. Boil in salted water in the proportion of 1 cup of groats to 2 cups of water. Remember not to stir the grits while cooking. If you have a pot with a thick bottom, you can remove it earlier from the burner and the grits will be covered in a few minutes.
