DESCRIPTION
Pai Mu Tan is one of the most classic and best white teas. It comes from Fujianu, a southeastern province of China. Pai Mu Tan is a mixture of young leaves and buds of the da bai bush, as well as shui xian bai. Harvesting takes place at the beginning of spring - in March and April, and this task requires great care - be careful not to damage the delicate sprigs of tea. The name Pai Mu Tan, meaning White Peony, comes from the similarity of the buds and leaves of the mixture to this popular flower.

HOW TO PREPARE
Pai Mu Tan is a good proposition for people who are just getting to know the world of tea - it is easy to prepare and does not require such restrictive guidelines as other types of tea. White Peony allows you to experiment with both water temperature and brewing time. It is only important not to flood the leaves and buds with boiling water and with water at a temperature of 70-90 * C. 1-2 teaspoons of Pai Mu Tan leaves are recommended for a 200ml cup. The brewing time should be adjusted to individual preferences: 1-7 minutes - depending on how strong the brew is to be obtained. Then strain the leaves and bud and enjoy a cup of excellent tea.
