Xanthan gum is a microbial polysaccharide that is obtained by fermenting carbohydrates with Xanthomonas campestris. It is a powder or granules, white or cream, which in the food industry is designated as E415. In the drilling industry, it is used as a product that increases the viscosity of the mud. Most often, however, it is used in food production as a foaming agent and stabilizer, and as a thickener. Very often it is used in the production of gluten-free food. It is very soluble and swells under the influence of water, forming gruel. As a stabilizer, it affects the taste and structure of food. As a gelling agent and thickener, it is most often used for the production of jams, jellies, sauces and other desserts.
